Hi Trevor! How have you and your dog been getting on with the training material? Remember that "behaviors that are reinforced, tend to be repeated and strengthened, whereas, behaviors that are not reinforced tend to extinguish and weaken." This means that if you reward your dog with food and water when he is barking and acting hyper, the behavior will be reinforced. If you wait for him to calm down and then as soon as he is calm give him the food, you will be reinforcing the preferable "calm" behaviors instead.
